Cheesy Lasagna

It’s been a rainy Singapore lately and with bed weather comes my craving for comfort food. And as my first D-I-Y food post, I’m featuring one of my go-to comfort food dish – a  serving of cheesy lasagna! Yes, this will be a carbs-filled post but who’s counting? 🙂

Now everyone loves lasagna, how can anyone not? And to even prepare it is not a daunting task as you’ll see. But it does seem so without being one. So the upside is you’ll look like a pro once you serve it up, and another plus is that it’s so filling you would almost always end up with leftovers. And trust me it gets better.

Ready for some cheesy goodness? Let me break it down for you in a few easy steps. Enjoy!

 

Tuesday Treats - Cheesy Lasagna

Prepare your Bolognese sauce. Saute ground beef & Italian sausage. When meat is brown and has broken up, make sure to remove ALL the fatty oil. Once done, add in the tomato sauce (not in photo), tomato paste, and finely diced carrots all together. Season with herbs, salt & pepper to taste. Set aside when cooked.

Next up, prepare your Ricotta mixture. Combine 250g cup of Ricotta, 1 cup parmesan (ground is preferred but I opt for grated here), and 2 eggs. Blend together with a mixer for better consistency. Set aside.

Prepare your baking dish (mine is 28×28 cm.), grated mozzarella, and lasagna sheets. I always go for Barilla! And no-cook lasagna sheets (always check the label), which just makes the whole process easier as they eventually soften anyway with the bolognese sauce & ricotta mixture being baked all together.

Now’s the time to layer. Start by lightly greasing your dish with olive oil, and follow the order above until you reach the top. I always aim having 4 layers of sheets minimum.

Note that the fresh basil leaves are optional but I love adding them in between to enhance the flavor. Plus they’re a good taste breaker from all the cheese and meat sauce one you bite into them.

Once you reach the top, go generous on the mozarella. I made a special note above because what’s pictured wouldn’t be ‘generous’ yet. But I ran out here. I think I was a little too generous in between layers. 🙂

Bake in a pre-heated oven. Cover with aluminum foil and bake for 30 minutes at 350F (175C). Uncover and bake until the cheese is bubbly and golden brown for 10-15 minutes more.

Voila! Let it sit for 5-10 minutes before serving.
